Spearmint Chocolate Chip Cookies
Playing around in the kitchen with new recipes can always be a tricky business, these scrumptious cookies however, do not disappoint. Who says being healthy can’t be fun?
Spelt Flour: This relic crop is making its come back with a punch of nutrients, minerals, and vitamins. Although similar to wheat, spelt has higher levels of protein and dietary fiber, almost 30% in just a single serving!
Chia Seeds: Although these seeds are tiny and black, don’t let them fool you. They are loaded with important benefits and are even prized for the ability that they have to provide energy. In fact the word “chia” in the ancient Mayan language translates to “strength.”
Molasses: Some would say that molasses is considered a superfood because of its high levels of iron, calcium, magnesium and manganese. These benefits can aid in anemia or related disorders and digestion, not to mention the mineral content also had the ability to improve hair growth.
½ cup coconut oil
½ cup butter
¾ cup raw sugar
½ cup honey
1 tablespoon molasses
1 ½ cup spelt flour
1 ½ cup soft white wheat flour
1 cup quick oats
¼ cup chia seed
1 teaspoon baking soda
½ teaspoon salt
1 cup chocolate chips
1 drop Spearmint essential oil
Preheat oven to 350. Combine refrigerated coconut oil and butter, whisk until smooth. Once smooth add raw sugar, honey, cocoa, molasses, and egg, mix until creamed together.
In a separate bowl combine spelt flour, soft white wheat flour, quick oats, chia seed, baking soda, and salt. Slowly pour into the liquid mixture while mixing. Add 1 cup of chocolate chips and mix.
Scoop 12 cookies onto a cookie sheet and bake on 350 for 12 minutes.
